We ranked really well in this competition, second only to the amazing TREE-to-bar Godavari/Bonfiction (whose inclusion bars I LOVE - try their “A Rose in Pistachio Skies” bar). We are conching Kokoa Kamili 70% right now! This is a multi-day process to make sure the flavor is exactly where I want it… classic and nostalgic with a playful zesty aftertaste that builds and builds! We cant rush perfection, so I will trust the process, step away from the chocolate, and catch up on business paperwork until it’s ready to temper.

Today’s equipment spotlight is our DIY Winnower! Most American craft chocolate makers have rigged up something similar in their factories. There is a bean cracker on top and then a shop vac that separates the unpalatable husks from the delicious nibs. It is LOUD so we always protect our hearing with headphones.

Kane took this picture of me completely blissed out on holiday cuteness at Hermann Sons Hall in Petaluma. I think I look like the Elf on the Shelf here. I wasn’t even looking at the camera! This was the most well-run and aesthetic Craft Faire I’ve ever experienced. The curation of artisans was amazing. I wanted one of everything and traded chocolate for Christmas ornaments (I can never be satisfied, hahaha) and slumped glass jewelry. I also splurged on some finishing salt that I plan on trying with chocolate once the holiday rush is over.
