There’s a lot happening inside those green pecan hulls right now! If you cut into a pecan at this time of year here in Texas, you’ll find the developing kernel beginning to fill out inside the shell. It’s one of the most exciting signs that harvest season is getting closer. 🌰

We’re now just a matter of weeks away from orchard-fresh pecans making their way to our shelves!

We’ll be sharing more updates as the crop continues to develop, the hulls begin to open, and harvest gets underway here in The Pecan Capital of the World — San Saba, Texas.

Orchard Update 🌳

Pecans are growing fast! We’ve seen a serious increase in their size over the past few weeks as they move through the water stage—one of the most important phases of the growing season.

During this stage, the developing kernel fills with a nutrient-rich liquid that nourishes it and lays the foundation for the plump, flavorful pecan you’ll crack open this fall. As the weeks go on, that liquid will gradually be replaced as the kernel fills out and matures.

Every sunny day and any rain helps move this year’s crop one step closer to harvest. It’s exciting to watch the orchard change week by week!

From tree to kitchen—we do it all.

It all starts in our orchards, where we harvest our pecans. From there, they’re shelled in our own facility, then handcrafted into the pies, pralines, candied pecans, honey butter, brittle, and all the other treats you know and love.

Ever wonder what’s happening inside a pecan this time of year? 🌳

Right now, the shell has formed, but the kernel inside is still soft, white, and filling with the rich oils that give Texas pecans their incredible flavor. This is one of the most important stages of the growing season, as every rain, sunny day, and healthy tree helps determine the quality of this year’s harvest.

Harvest is still a few months away, but it’s exciting to watch the next crop take shape one pecan at a time.

Around here, the pecan is the star of the show.

We still make our Chewy Pecan Pralines by hand in old-school kettles using an old Oliver family recipe. Instead of burying the pecans in sugar, we let them shine—because great pralines should taste like fresh Texas pecans first.

It’s our Texas twist on a Southern classic, made the same way it’s always been: one batch at a time.
