After a long and varied career in the food world, I opened an antiquarian book store in January 2004 dedicated to the literature of the kitchen and garden. Through the years my personal collection reached several thousand volumes which forms the core of my stock. At the heart of the collection are 19th century American cookery books, charitable and classics. Since moving to the South, it has been

my pleasure to acquire books from every lip-smackin' Southern state. There are a hundreds of volumes on French and Italian cooking, many in the native language. The bookstore is tucked back off the road in a palmetto, long leaf pine and magnolia setting on an acre of Panhandle hammock. Formerly law offices, the space now is crowded with bookcases in every room. The wrap around porch invites lingering over an old tome or two. Appointments welcome anytime.

About 8-10 days ago I bought a nice pineapple, heavy-ish for its size. I passed the time watching it reach the peak of ripeness. As soon as I walked into the kitchen today from the bookstore there was a sweet aroma. It was ready to burst open.

I grabbed the crown and wacked the whole pineapple 🍍 hard several times on the counter on the bottom of the fruit to “unseat” the plug at the center, maybe like a belly button. I removed the crown grabbing it with one hand and twisted it off. I used a knife to help get my fingers around the plug in the bottom and gently pulled.

The whole idea wast to enjoy each eye of the pineapple like a personal size bite. I did use the knife to make some of the plugs easier to pull out, but wow! What a great afternoon refresher.
