What part of making my chocolates takes the longest?

The answer might (or might not) surprise you: painting every individual design inside my polycarbonate molds!

Each mold contains between 24 and 32 individual forms, and every single one is hand-painted. Before I can begin, the colored cocoa butters must be carefully tempered. I then apply them to the molds using a variety of techniques to create each design.

The process also requires patience! Each color needs time to crystallize before I can apply the next one. If I move too quickly, the colors can blend, smear, or fail to release properly from the mold.

People often ask which of my designs takes the longest to create, and the answer usually comes down to one thing: the number of colors. The more colors you see on a bonbon, the more individual layers I painted - and the longer that little chocolate took to bring to life.

So when you open a box of XO’Xocolati Chocolates, every swirl, splatter, shimmer, and brushstroke you see was painted by hand, one color and one mold at a time!

It’s time to settle one of the season’s most important debates: which fall flavor reigns supreme?

Are you loyal to a classic, or is there another fall flavor that deserves a spot on the list?

🍑 NEW FLAVOR: Country Peach 🍑

This one tastes like the last golden days of summer wrapped inside a chocolate.

Country Peach begins with a bright, fruity peach pâte de fruit, gently spiced with cardamom and cinnamon. It’s layered with a silky vanilla bean ganache for a creamy finish that brings everything together.

Fresh peach. Warm spice. Smooth vanilla. It’s cozy, nostalgic and just a little bit fancy - like homemade peach cobbler dressed up for a special occasion!

Look for Country Peach in the case and add it to your next box before it’s gone!

Happy International Chocolate Day!

Today, I’m feeling especially grateful for chocolate - not just because it’s delicious, but because of everything it has brought into my life.

Chocolate gave me a creative outlet. It gave me a career I truly love. It has challenged me, inspired me and introduced me to so many wonderful people. It has allowed me to turn ideas, memories and favorite flavors into tiny, hand-painted works of art - and then share them with all of you!

But I also appreciate chocolate for the role it plays in the lives of the people who enjoy it.

Chocolate is there for birthdays, anniversaries and holidays. It’s tucked into Easter baskets, wrapped beneath Christmas trees and given to someone special on Valentine’s Day. It helps celebrate engagements, weddings, new babies, graduations, promotions and the closing of one chapter before the next begins.

It says, “Congratulations!”
It says, “Thank you.”
It says, “I love you.”
It says, “I’m thinking about you.”
And sometimes, it simply says, “Today was terrible... let’s eat chocolate.”

Chocolate is there for the big, joyful milestones, but it also makes the smaller moments feel special: sharing a box with someone you love, bringing a treat to a friend, rewarding yourself for surviving a long week or quietly enjoying the piece you definitely weren’t planning to share.

Life comes with celebrations, disappointments, fresh starts, hard endings and plenty of ordinary days in between. Chocolate may not fix everything - but it has a lovely way of making almost any moment feel just a little bit sweeter.

So today, I’m celebrating chocolate for the joy, comfort, creativity and connection it brings, and feeling incredibly lucky that I get to make it part of my life every single day. 🍫❤️

What makes a handmade bonbon worth the splurge?

It may disappear in two bites - but considerably more than two bites’ worth of work goes into creating it!

Every XO’Xocolati bonbon begins as an idea. A familiar dessert, a favorite cocktail or an unexpected flavor pairing is tested and refined until every layer tastes exactly right.

Then comes the process: tempering the chocolate, hand-painting each mold, casting the shells, preparing the fillings, piping each piece, sealing the bottoms and carefully unmolding every finished bonbon.

And because these chocolates are made by hand, not stamped out by a machine, each one is a tiny, one-of-a-kind piece of edible art.

You’re not simply buying chocolate. You’re supporting creativity, quality ingredients, hours of skilled work and a small Minnesota business that genuinely cares about every single piece bearing its name.

Is it an everyday candy bar? Nope. It’s a little luxury - and you’re absolutely worth the splurge. 💕🍫
