Masa de nixtamal. White and red corn tortillas today. It's all about textures, the starchy red corn is a total wonder. Thick, tender and sturdy. So corny and nutty. White corn, the one most familiar to everyone and at the same time it shocks once you bite into a tortilla, so much flavor!! and you'll be convinced never to buy bulls**t tortillas again.

The purpose of nixtamal is to loosen the outer skin of the corn. Why? In a nutshell, to make it digestible to humans and to provide necessary nutrients. This is how civilizations thrived in America for centuries. Why mess with a good thing, right? In that spirit, we don't remove anything necessary, the whole corn kernel is used, less most of the pericarp, because it acts as a glue to hold the integrity of the tortilla and all those little dark bits? The kernel tips, the germ, plus toasted bits of masa while going through the oven.. you want all of this in a tortilla.

Totopos are ready for the weekend!!! How you eat them is up to you. A good fresh salsa, some good mashed up beans, guacamole, cheese... migas? Chilaquiles? Or just by themselves.. whichever way you choose know that these goodies are made traditionally, not greasy, not salty, just a perfect balance of fresh nixtamal tortillas, veg oil and sea salt.. yummy goodness! Oh! and these are a mix of yellow, white, red, blue and green corn. You will notice a difference in each one!

Hominy, Hickory King non-gmo corn. We've been getting plenty of requests for fresh nixtamal this summer. I love it. Soup year round is a thing and what I've learned from you is that you're using it in many different recipes, not just for pozole anymore, chili? Beans? Salads? Fried in butter, yes please, to all of it.
