Exactly what we want to be eating right now!! Beyond !!

[Edit: SOLD OUT] We will be closed for dinner service tomorrow, but I’ll be in the house slinging veggie burgers because who needs sleep, right? heirloom bean and smoked mushroom burger with special sauce, lettuce, pickles, red onion, concentrated burger jus and finally tomato too! That means I will have to raise the price a buck though. Big ass veggie burger, everything made from scratch, takes three days to make, costs you $16. Way less mark up than a beyond burger and way better. Gonna whip up a side salad too. We only have 50 this time cause I don’t think it will be too busy. DM to reserve with your name, number and amount of burgers you’d like. Order salad and beers on site. Pick up will be between 2-3 tomorrow Please don’t show up without reserving through DM ✌️Thanks! 📸:

Repost: a fine bowl of braised “old Indian woman” beans with sautéed snow peas, and cherry tomatoes. finished with camomile infused marcona almond milk, black fennel & greek basil, and smoky saffron chili oil. may it ease the existential dread for just a moment.

Our 1 lb bags of beans make us so happy and we're honored that so many of you have brought these beautiful beans into your homes. We wanted to let you know that we're discontinuing this size bag. This wasn't our intention when we sourced freshly harvested beans at the start of the year - but the world has changed, packaging and warehousing partnerships have changed, and it's not realistic for us to continue with this channel right now. ⁠

This year's harvest is being offered in 🫘25 lb bags🫘. We're thrilled to continue to support our chef community and any of you that want to take your bean challenge to the next level! 👊⁠

We're committed to supporting our farming partners and celebrating beans that are grown in a way that are better for us and the planet. The food choices we make matter. That's not going to change. So, we're making some changes and bulking up!⁠

Maybe not everyone’s idea of a cozy Sunday morning read…😉…but this is exactly how I want to start my day! Just finished Perilous Bounty by - an incredibly well written and researched look at the perils of our food system and what we can possibly do about it. Yes, it can all seem depressing and overwhelming (big ag, monocropping, water shortages…ahhh)…but it can also be so much more delicious and beautiful. And empowering. We’ll keep voting with our forks. Everyday. 👊👊👊

It's Climate Week in NYC and we took this opportunity to re-read a book that was a big catalyst for us in starting Beanstory: WE ARE THE WEATHER, by Jonathan Safran Foer. This book is as thought provoking as ever. It shares struggles that are very real and confounding as it relates to climate change and specifically around reducing the amount of meat that we eat. ⁠

Despite all we know, 2023 was the hottest year on record. Emissions continue to rise, and demand for meat does too.⁠ "Short-term pleasure is more seductive than long-term survival," acknowledges Foer. ⁠

But, here's the thing, eating more plants, (and in turn less meat), isn't a sacrifice. At least not in our books. With the right ingredients and the right recipes, veggies can steal the show! In fact, we venture to say that the most delicious plant-based meal can surpass the most delicious meat based meal any day. ⁠

Curious if you agree or disagree. Could you eat LESS meat without it feeling like a sacrifice? ⁠⁠⁠⁠

These might be one of our absolutely favorite beans. It's hard to ignore the name (Old Indian Woman)...and the color screams FALL. They hold their shape beautifully and have a lovely bite, making them great for salads, bowls, stews, whatever you have cooking up this season. ⁠
