This week has been a w**e and mead week, my kitchen counters covered in gallons and gallons. Over this last year I've been researching and trying my hand at creating folk w**es and honey meads using the fruit, flowers, and herbs I have in my local area. I was happily surprised at the absolute abundance of material that can be used! Roses, quince blossoms, violets, muscadine, daylily, dandelion.. My only "ick" moments have come from reading umpteen books on w**emaking that call for unnatural flavoring and chemical stabilizers. No thanks. So, I did more research to see what people used before. Now I wait and see! I'm mentally making a checklist to make a batch of mead using wild yeasts from juniper. There will be failures, that's the nature of the beast. But, hey...it's my mead for myself. If it's terrible, I learned. If it's not...well, then that's a new road.
