The flower in this photo is (Ratibida Columnifera), commonly known as the Mexican Hat flower or upright prairie coneflower. It is a hardy, drought-tolerant perennial native to North American prairies.

Culinary Uses Include:

The entire aerial part of the plant—leaves, stems, and flower buds—is edible, featuring a crisp, juicy texture and a slightly tangy, lemony flavor.

Soups and Stews: Cooked as a potherb. It turns slightly mucilaginous (slimy) when heated, making it excellent for thickening liquid dishes.
