Grilling up this summer!! Keep it fresh and simple. Here we have Sweet Potatoes, with Beef Tallow rubbed in Wah Gwan All purpose and G-Salt. No gate keeping ( Beef Tallow and Sweet Potatoes Love Each other!!!!) we have a beautiful cut of Steak rubbed with olive oil Wah Gwan All purpose and Dry Brine. And some lovely local Asparagus tossed with Olive Oil and our G-Salt. Finished with Lemon.

I have a love-hate relationship with fish. This short was part of a much bigger conversation that we had about fish and the industry, which led to us turning the cameras on and filming this. I caught a great podcast episode the other day that resonated with me. It gives confirmation to what I struggle with concerning fish. Check it out at. My first time having it this way was at Mario Batali's restaurant, Esca, about 15 years ago. I have used this technique since. Salt-baked Fish is simple, pure, and gets you to the essence of the fish. This is a very forgiving stye of Cooking, with maximum payout in presentation. When you bring this out for dinner, your company will think you slaved. Did you though? 🤫Sometimes, the best things come from keeping it simple and using what’s around you. With so much information being thrown at us daily, let’s not forget to use our common sense. Support local when you can, branch out when you need to. And Rosie—blessings with no questions. 🙏🏾✨ is the recipe: Salt-Baked Branzino with Herb Oil & G-Salt🔥 # # # # # Ingredients:1 whole branzino, gutted & scaled4-5 cups Kosher salt or Wah Gwan Dry Brine½ cup water (for binding)Lemon slices & fresh herbs (thyme, rosemary, parsley)🌿 Herb Oil:¼ cup olive oil1 tbsp fresh chopped herbs (parsley, basil, chives)1 small garlic clove, mincedZest of 1 lemonA dash of Wah Gwan Scotch Bonnet Powder🧂 Finishing:G-Salt (at the table)🔥 Method:Preheat oven to 400°F (200°C).Mix salt & water until it forms a thick, moldable texture.Stuff the fish with lemon slices & fresh herbs.Pack a thick layer of salt (about ½ inch) on a baking sheet.Place the fish on top, then fully cover it with the remaining salt, sealing it completely.Bake for ~25-30 minutes (until the crust is firm).Crack the salt crust, remove the skin, and serve.Drizzle with herb oil & finish with G-Salt at the table.🔥 Simple. Try this easy and delicious homemade gravy recipe! And for a more in depth guide: go to our youtube page at youtube.com/

1. Make a homemade stock by chopping onion, garlic, leeks, bell pepper, celery, and add turkey pieces with bones, smoked turkey necks or whatever scraps you may have.

2.Drizzle all chopped ingredients with olive oil or vegetable oil and season ingredients with our Wah Gwan Dry Brine or kosher salt.

3. Put in oven at 350 degrees for 45 mins to 1 hour or until golden brown.

4. Remove from oven and put into a stock pot.

5. Add in store bought chicken/turkey stock for more flavor (water can be used here as well but stock is recommended). Use enough to cover vegetables by an inch or two.

6. Partially cover with a lid. Put on stove top at medium heat and bring to a boil. Then, reduce heat to low and let simmer for 90 mins to 2 hours.

7. After the stock is finished, let it cool, strain the liquid, and set aside.

8. Make a roux: In a sauce pan on medium heat add equal parts butter and flour whisking vigorously and continuously until incorporated into a very light peanut butter color.

9. Add in one cup or a ladleful of stock at a time, whisking vigorously until incorporated.

10. Let simmer until desired consistency and season to taste. Add a bunch of fresh chopped herbs.

Pro Tip: We recommend a dash of Wah Gwan All Purpose and a pinch of Wah Gwan Scotch Bonnet for a slight kick.

If you plan on making this days ahead, which we recommend (3 days in the refrigerator or up to a month in the freezer). If making ahead, wait to add the herbs until after reheating and preparing to serve. (Parsley and Chives recommended).
