It’s springtime here at Schwab Farms. Our mamas are starting to drop their calves! So far we have three heifers and one bull calf. When we had pregnancy checks done with Dr jon Schwab a couple months ago we were able to verify most of our females were bred.
So what does it mean to have heifers versus bulls. If you’re a connoisseur of Doc’s Bayside Beef you know that we have been in shorter supply. The reason that we’ve been in shorter supply is because we have held back heifers to breed rather than to send to butcher. This allows us to increase our her size by adding more females to the herd. However, for those of us were hungry for steak it means we have to wait a little longer cause there’s less animals to go to butcher. Will we keep all of these heifers that are born this year? We have to ask ourselves that as the season progresses and we see what kind of numbers we gain. We have approximately 20 other cows. And every year we usually save back one or two heifers, but over a year ago we made the decision to save more than that.
As a producer, I don’t like to disappoint my buyers. We have kept our prices at what we believe is fairly competitive. Our butcher and some other producers that I know, and follow have encouraged us to raise our prices because the quality of our Beef is such that it deserves to be priced accordingly, and in addition it should cost you more than what you can buy at Meijer or Walmart. That being said we are raising our prices to at least five dollars per pound for our quarters halves and whole animals. And our individual pieces in our meat shed will also be raised ever so slightly. We hope we don’t lose any of you as buyers. I don’t think that we will because I believe we have a loyal following and I can’t thank you enough for trusting us with your dinner!

It’s my favorite time of the year. The crisp in the air harvest starting all around me smell of beans coming off the fields. You’ll see me sharing a lot of pictures in the dark because I’m up early to walk the dogs and I walk the dogs at the end of my day which right now it’s dark 30. From our farm, I can see our combine in the field that we rent and right now the trains coming down the tracks behind it. I know my phone camera won’t do it justice, but you’ll have to imagine it in your mind.
