Mother's Day 2026 assortment, available beginning May 4 at Cranberry's in downtown Staunton. I had a great deal of trouble the past few days when unmolding bonbons. In far too many of them there was a hairline crack (see photo below). It occurred in my large domes from CW. The chocolates mostly came out of the molds without too much difficulty (sometimes an extra tap was necessary). Our warm weather has begun, and I know that can be a factor in making chocolates, but it wasn't really that warm when I made the bonbons. A common explanation in the past has been that the shells were too thin. Of course it is very difficult to know how thick a shell is going to be until it's too late, but I took special pains when making these shells: I filled them with chocolate (Felchlin) and let them sit for several minutes, then mostly emptied them out, but left enough chocolate in order that I could swirl the molds around so that the chocolate would have another chance to stick to the sides. Still this crack happened. Any ideas will be most welcome. I am beginning to think that these large domes are a problem (the issue didn't happen with non-dome molds), but I really like them for bonbons with several layers.

People often ask what my favorite flavors are. Most of them are available in the Valentine's 2024 assortment--including baklava, tiramisù, crème brûlée, almond & sour cherries, cinnamon bun, pecan pie, raspberry rose, caramel with sea salt (of course!), and more. I'm sold out from the home kitchen, BUT boxes are available at Cranberry's Grocery & Eatery and at the Staunton Winter Market this coming Saturday (2/10), 9-12.
