Chinese Tea + Chocolate. What a discovery.

Yesterday we gathered around the table to explore four Chinese teas alongside four very different chocolates—and I think I learned as much as anyone sitting there.

What fascinated me was discovering how much the world of fine Chinese tea has in common with fine chocolate. Origin matters. Processing matters. Tradition matters. And the more we slow down and pay attention, the more there is to notice.

We began with pairings thoughtfully selected with Liang of Kesshō Chocolate, and then, of course, curiosity took over.

We experimented.

Fruition Brown Butter Milk Chocolate with Wuyi Yancha was a wonderful discovery.

And Kesshō’s Black Sesame White Chocolate? That chocolate seemed to find something to say with just about every tea we tried.

That’s my favorite kind of tasting. Not simply, “Does this pair?” but—

What happens when we try it?
What changes?
What do YOU notice?

A very special thank you to Liang and Kesshō Chocolate. One of the things I treasure about knowing the people who make the chocolates I share is being able to call, ask questions, exchange ideas and learn from one another.

Liang may not have been sitting at our table yesterday, but it certainly felt as though she was there with us.

I can hardly wait for our next pairing.

Harvest begins with gathering. 🍫

When we hear the word Harvest, we usually think about what is gathered from the land.
For chocolate, that begins here—with the fruit of the cacao tree.

When cacao pods ripen, farmers harvest and gather the fruit. But that's only the beginning.

People gather, too.

Farmers and communities work together through harvest and post-harvest. Cacao is fermented and dried. Makers take those beans and bring together craft, technique and their own ideas about what that cacao can become.

Eventually, some of those chocolates find their way to Chocology.

And then something else happens.
We gather around the table to discover them.

This season, when I talk about Harvest, I'm thinking about more than what we gather.
I'm thinking about the people who gather along the way.

From the cacao tree...to the farmer...to the maker...to our table.

Harvest = Gathering.

Tonight's mission: tasting our way through the Saint James Brewery lineup to discover which chocolates belong together with which beers.

Because apparently this is what counts as research at Chocology.

Peace by Piece is coming back. ☮️

If you've been around Chocology for a while, you may remember our 10,000-piece LEGO Peace sign from last summer. What you may not know is that it began as a family project 12 years ago.

It wasn't built by one person.

It was built Peace by Piece, by all of us.

Students stopped in. Families added pieces. Friends helped. People who had never met one another found themselves standing around the same table, building something together.

And I loved every minute of it.

This Harvest, it seems like the perfect time to gather around the table and do it again.

On Sunday, September 13, I'm inviting our community back to Chocology to help rebuild it.

I've brought just a small piece into the shop, along with some of those 10,000 LEGO pieces and a photograph of what we created together last time.

No building yet. 😉

Just a little preview of what's coming.

Then on September 13, we'll gather around the table and bring our Peace sign back together... Peace by Piece. ☮️

Come for five minutes.
Come for an hour.
Add a few pieces.
Bring the kids. Bring a friend. Bring someone who loves LEGO.

Because a little more peace in the world sounds pretty good to me. ❤️
