🍫✨ Bar of the Week: To’ak Caramelized Pop Amaranth — a crowd-pleaser with serious history!
Hey friends, it’s Brook! 👋 Today I’m sharing one of my go-to recommendations when someone asks “what should I bring to a party?” or “what’s a fun gift?” — the To’ak Caramelized Pop Amaranth from their Alchemy line. 🌽✨
Here’s why this one’s so special:
🌿 To’ak is famous for making some of the rarest and most prized chocolate in the world, using Heirloom Nacional cacao from Ecuador — so rare that out of 11,000 cacao trees tested by Ecuador’s National Institute of Agricultural Research, only SIX were found to be Ancient Nacional. 🤯
This bar is part of their Alchemy Collection — a series spotlighting indigenous, ancient, and endangered ingredients from four of South America’s most unique ecosystems: the Amazon rainforest, the Andes mountains, the Pacific coast, and the Galápagos Islands.
And the amaranth itself? Inspired by “chispiolas,” a traditional roadside treat from the Ecuadorian Andes — popped amaranth seeds toasted, wrapped in caramel, hand-cut into cubes, and covered in cacao butter. 🌽
Tasting it: smooth, sweet, dark chocolate (65%) with toasty, nutty crunch from the popped amaranth, a touch of salt, and just enough earthy-herbal complexity to keep things interesting. People don’t even realize it’s dark chocolate — they just know they want more! 😄
