🍫✨ Bar of the Week: To’ak Caramelized Pop Amaranth — a crowd-pleaser with serious history!

Hey friends, it’s Brook! 👋 Today I’m sharing one of my go-to recommendations when someone asks “what should I bring to a party?” or “what’s a fun gift?” — the To’ak Caramelized Pop Amaranth from their Alchemy line. 🌽✨

Here’s why this one’s so special:

🌿 To’ak is famous for making some of the rarest and most prized chocolate in the world, using Heirloom Nacional cacao from Ecuador — so rare that out of 11,000 cacao trees tested by Ecuador’s National Institute of Agricultural Research, only SIX were found to be Ancient Nacional. 🤯

This bar is part of their Alchemy Collection — a series spotlighting indigenous, ancient, and endangered ingredients from four of South America’s most unique ecosystems: the Amazon rainforest, the Andes mountains, the Pacific coast, and the Galápagos Islands.

And the amaranth itself? Inspired by “chispiolas,” a traditional roadside treat from the Ecuadorian Andes — popped amaranth seeds toasted, wrapped in caramel, hand-cut into cubes, and covered in cacao butter. 🌽

Tasting it: smooth, sweet, dark chocolate (65%) with toasty, nutty crunch from the popped amaranth, a touch of salt, and just enough earthy-herbal complexity to keep things interesting. People don’t even realize it’s dark chocolate — they just know they want more! 😄

This week we are celebrating BRENNA!! Brenna has been with us for about 2 1/2 years now and is like a ray of sunshine whenever she works. Brenna is graduating this weekend, and we can't wait to see all of the amazing things she'll do in the future! 🍫🌿 Bar of the Week: Kakōa 82% Pichucalco, Chiapas — a taste of ancient Mexico!

Hey friends, it’s Brook! 👋 This week I filmed right next to the Yahara River (the very river our shop is named after!) to share a bar that’s just close to my heart — the Kakōa 82% Pichucalco, Chiapas from Mexico. 🌳

This bar comes from the heart of Chiapas, an area with one of the most ancient and revered cacao traditions on Earth. Cacao cultivation in Mesoamerica dates back to the early Olmec civilization (around 2000–1000 BCE) — long before the Aztecs — and the Olmec are widely believed to have been the first to transform cacao into chocolate. When the Spanish arrived, much of that heirloom tradition was nearly lost — but thanks to multi-generational family haciendas in Pichucalco, the rare native varieties live on. 🌱

This bar is made from Criollo cacao — a prized, white-seeded heirloom variety, which is why it almost looks like milk chocolate even at 82%! Smell it first (always!) — the aroma alone is intoxicating. On the palate it’s floral, fruity, a touch herbal, with notes of plum and blackberry, and just a whisper of woody warmth. The chocolatey-ness sneaks in at the end — completely unexpected and wonderful. ✨

🍫 Kakōa was founded in 2019 by maker Maria, sourcing exclusively from small-scale farmers in Chiapas and southern Mexico. Her bars are lightly roasted with a shorter refining time — giving them a vibrant, “untamed” flavor unlike anything else.

🍫🌺 Bar of the Week: Manoa Ko’olaupoko 70% — a taste of Hawaii!

Hi, it’s Brook! This week I’m so excited to share one of my favorites: the Ko’olaupoko bar from Manoa Chocolate, made with 100% Hawaiian-grown cacao. 🌴

Here’s something that surprises a lot of people: Hawaii is the only U.S. state with a climate suited to commercially growing cacao — which makes it the “north pole” of the chocolate world and these bars truly one of a kind. Manoa was started back in 2010 by Dylan Butterbaugh as a college project at the University of Hawaii, and has since grown into one of the largest and most pioneering craft chocolate makers in the country.

And the chocolate itself? Pure magic. The aroma alone is intoxicating — sweet, slightly fruity, deeply chocolatey. At 70%, it’s wonderfully approachable, with a creamy, tangy, almost pineapple-like brightness and a finish that lingers. It’s the bar I reach for when someone says they “don’t like dark chocolate” — because this one always wins them over.

😉 (Fun fact: this single-origin bar is a 2019 International Chocolate Awards winner!)

This is a true crowd-pleaser and the perfect intro to single-origin chocolate. Come grab one before it’s gone! 🌿
