I had several of you comment and reach out in PM's asking if I would share the recipe for the Cottage Cheese I made the other day... And, also, several asked WHY would I make cottage cheese??? LOL.. My favorite, from Marcia... "You do know they sell cottage cheese in stores, right?" 🤣🤣
So here's the recipe that I used. I looked up several recipes online and all were the same ingredients, whole milk and lemon juice or vinegar, with different variations of temperatures and the amount of vinegar or lemon juice to use So... I just kinda did it... The results were awesome and I will DEFINITELY be making my own cottage cheese from now on! :) The homemade is quite a bit drier than store bought, which I am totally fine with since I do get a little weirded out by the really wet stuff, but if it's too dry for you, then adding half and half or heavy cream fixes that :)
Now, to answer WHY??? 🤔 would I choose to make it instead of just buying it? Honestly, my main reason was just because of the plastic containers.. I have been eating a ton of cottage cheese these last several months... like a LOT! (along with Greek Yogurt) It's a great source of protein and so versatile, so I've been going through 1-2 containers a week. Now, If you know me, you know I am all about trying to reduce my use of plastics that I know can't be recyled... It's a BIG thing for me!! so the number of containers stacking up were starting to weigh on my conscience. As much as we really want to believe that we are doing good by putting those items in the recycle bin, the reality is that a very small percentage of our plastics actually get recycled :( and I'm trying to create a better world for my grandbabies
