Ambrosia Fruit Salad

Delicious and so EASY!!!

Ingredients

1 (8 ounce) container frozen whipped topping, thawed
2 1/2 cups shredded coconut
1/2 cup chopped pecans
1 (8 ounce) can fruit cocktail, drained
1 (8 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin oranges, drained
3 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained (optional)
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon

Directions

1In a large bowl, combine the whipped topping, coconut, chopped pecans, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries, nutmeg and cinnamon. Mix together well and refrigerate for 30 to 45 minutes.

HONEY-PECAN GRANOLA - It doesn't get any healthier!
Use this homemade granola as a topping for yogurt, enjoy it as a cereal with milk, or simply snack as is. It's easy to make and is more economical than store-bought.

Ingredients
3 cups old-fashioned rolled oats
1 1/2 cups pecans, coarsely chopped
3 tablespoons unsalted butter, melted
1/3 cup wildflower or orange blossom honey
1/2 teaspoon coarse salt

Directions
Preheat oven to 300 degrees. In a large bowl, combine oats, pecans, butter, honey, and salt; mix well to coat. Transfer to a parchment-lined rimmed baking sheet and spread in an even layer. Bake until oats are lightly golden, 30 minutes, stirring halfway through. Let cool completely on sheet.

In a Nutshell—Pecans 101
A native North American nut indigenous to the Mississippi River Valley, East Texas, and northern Mexico, pecans were brought to the Mesilla Valley by settlers in the late 1800s. The trees were valued as much for shade in a hot climate as for the nutmeats that had sustained many Native peoples for centuries.

Pioneering horticulturist Fabián García, the first agricultural specialist at what is now NMSU in Las Cruces, is famous for laying the foundation for the state’s commercial chile business. He contributed similar but lesser-known influence in pecan production. In 1913, he began planting some dozen and a half varieties of pecan trees in what the university now calls the Fabian Garcia Science Center. Knowing that the trees flourished in the rich soil of the lower Mississippi River, García suspected that the trees might thrive near the Río Grande. His goal was to find varieties of pecan trees that produced well and had a relatively thin shell for simple cracking. Some of the trees just up and died, but one variety, the Western Schley, thrived.

That's the variety we carry here at Tularosa Pecan Company. We mix the state’s two titans—pecans and chile—which make a nice couple when nuts are dusted with red or green chile powder, a popular snack and a great gift!
