We tried smoked al pastor for the first time and it did not disappoint 🌮🔥
Here’s how we did it (we followed the smoked al pastor recipe from and adapted some ingredients based on what we could find at the grocery store)👇🏼
24 hours before smoking, we mixed up this marinade in a sauce pan on the stove and then blended for a perfectly smooth sauce:
• 2 TBS butter
• 1/4 diced white onion
• 4 cloves minced garlic
• 1/2 cup chicken stock
• 2 chipotle peppers in adobo sauce
• 1 packet Sazón Goya achiote
• 1/2 packet ancho chile taco seasoning
• 2 tsp oregano
• salt to taste
• 1 TBS sugar
• 1/3 cup white vinegar
We sliced our pork roast thin strips, marinated them overnight, then smoked them until tender and finished them at a higher temp to crisp the edges a bit.
Served on warm tortillas with pineapple, onion, cilantro, queso and lime. Definitely making this one again.
