🍸 Behind the bar with Dan!

Yes, we LOVE getting creative with our balsamics and incorporating them into some of our signature cocktails… it’s part of what makes Olivino, Olivino. But that’s not all we can do behind the bar!

This is Dan making one of his personal favorites (and one of his own creations), the Last Plane to Carajillo. ✈️☕

So whether you’re in the mood for one of our signature Olivino cocktails or want to try something a little different, just ask!

And if you see Dan behind the bar… you might want to ask him to make you this one. 😉🍸

🍅🌿 Roasted Tomato Basil Soup with an Olivino twist

Soup season is officially here! This creamy roasted tomato soup uses Olivino Basil Olive Oil and Traditional Balsamic for an extra layer of flavor. Serve it with crusty bread or your favorite grilled cheese for the ultimate cozy fall dinner. 🍂

OLIVINO ROASTED TOMATO BASIL SOUP
Makes approximately 8–10 servings

Ingredients:
• 6 Roma tomatoes, halved
• 1 large yellow onion, cut into chunks
• 1 whole head of garlic
• ¼ cup Olivino Basil Olive Oil, divided
• Salt + freshly ground black pepper
• 2 (28 oz) cans whole peeled tomatoes
• 3 Tbsp tomato paste
• 3 cups chicken broth
• ⅛–¼ tsp red pepper flakes
• 1 tsp Worcestershire sauce
• 1 cup heavy cream
• ½ cup freshly grated Parmesan
• 2 Tbsp butter
• 1 Tbsp Olivino Traditional Balsamic, plus more to taste
• Handful of fresh basil, optional

Directions:

1. Preheat oven to 425°F.
2. Place the halved Roma tomatoes and chopped onion on a sheet pan. Cut the top off the head of garlic to expose the cloves, drizzle with Basil Olive Oil and wrap loosely in foil.
3. Drizzle the tomatoes and onion generously with Olivino Basil Olive Oil and season with salt and pepper. Roast everything for 35–45 minutes, until the tomatoes are caramelized around the edges and the garlic is soft.
4. Heat a drizzle of Basil Olive Oil in a large soup pot over medium heat. Add the tomato paste and cook for 2–3 minutes, until it deepens to a darker red.
5. Add the roasted tomatoes and onion, all of those flavorful juices from the pan, and squeeze in the roasted garlic. Add the canned tomatoes with their juices, chicken broth, red pepper flakes and Worcestershire sauce.
6. Bring to a gentle simmer and cook uncovered for 20–25 minutes.
7. Add fresh basil, if using, then blend until smooth and creamy.
8. Reduce heat to low. Stir in the heavy cream, Parmesan and butter until melted and silky.
9. Finish with 1 tablespoon Olivino Traditional Balsamic. Taste and add another small splash if desired. Season with additional salt and pepper as needed.

Serve warm with fresh Parmesan, basil and a finishing drizzle of Olivino Basil Olive Oil. 🍅🌿

The Basil Olive Oil brings the herby flavor throughout the soup, while the Traditional Balsamic adds just the right touch of sweetness and depth to those roasted tomatoes.

Save this one for your next cozy fall night! 🍂

Cocktails with Dan at Olivino 🍸

First up… the Final Ward.

Dan’s a fan of cocktails like this one: a little spirit-forward, a little complex, and a whole lot more interesting than your everyday drink. So we put him behind the bar and let him show us one of his favorites.

Wh***ey, Green Chartreuse, maraschino liqueur and fresh lemon come together for this one.

What should he make next?

When you don’t know what to get… ask Taylor. 😂🙌🏼

I stopped in and told her to pick out some fall must-haves for me. No questions asked, I just trusted her to do her thing. 🍂🫒

Safe to say she understood the assignment.

And seriously, if you come into Olivino and have no idea where to start, just ask! Tell us what you like, what you’re cooking, or what kind of flavors you’re looking for and we’ll help you find something good.

These were Taylor’s picks for me 👆🏼 Which one would you try first?

Homemade hummus

1/3 cup good-quality tahini
2–4 tablespoons cold water, or more if needed
2 tablespoons olive oil (I used wild fernleaf dill)
1/2 teaspoon ground cumin
3/4 teaspoon fine sea salt
2 medium cloves garlic, peeled and smashed
juice of 1 lemon (2–3 tablespoons)
1 (15 ounce) can chickpeas*, rinsed and drained

Add tahini, cold water, olive oil, cumin, salt, garlic and lemon juice to a food processor. Puree until smooth.
Add in the chickpeas. Puree for 3-4 minutes, pausing halfway to scrape down the sides of the bowl, until the hummus is smooth. If it seems too thick, add in another tablespoon or two of water.
Taste and season with additional salt, cumin, and/or lemon juice if needed.
