March is National Noodle Month! Let's celebrate. Here’s a recipe you’re sure to enjoy from 'RV There Yet' (pssst…you don’t have to make it in an RV)šŸ

One Pot Lasagna - Serves 6
1 T. vegetable oil
1 lb. ground turkey
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. red pepper flakes
Salt and black pepper to taste
6 oz. mini lasagna noodles (Mafalda)
1 (24 oz.) jar marinara sauce
2 C. chicken stock
½ C. shredded mozzarella cheese
¼ C. grated Parmesan cheese
¾ C. cottage cheese

Heat the oil in a medium saucepan over medium-high heat. Add the ground turkey and cook until no longer pink, crumbling it while it cooks; drain and return to the saucepan.

Stir in all the seasonings and cook for a minute or two. Stir in the noodles, marinara sauce, and stock. Bring to a boil, cover, and simmer for 20 minutes, until the noodles are tender, stirring often.

Remove the pan from the heat and stir in half the mozzarella and Parmesan cheeses. Drop the cottage cheese in blobs over the top and sprinkle with the remaining mozzarella and Parmesan. Cover and let stand off the heat until melted. Stir gently before servingšŸ¤—

Asparagus & Ham Fettuccini, Serves 6

1 (16 oz.) pkg. uncooked fettuccini
½ lb. thin asparagus stalks, trimmed & cut into ½ʺ pieces
¼ C. butter
1 C. diced cooked ham
1 (8 oz.) pkg. sliced fresh mushrooms
1 C. frozen peas, partially thawed
1 C. heavy cream
1 pint cherry tomatoes, halved
Garlic salt and black pepper to taste
ā…” C. grated Parmesan cheese

Cook the fettuccini according to package directions, add the asparagus pieces during the last 3 minutes of cooking time; drain. Meanwhile, melt the butter in a very large skillet over medium-low heat. Add the ham and mushrooms and cook for 3 minutes. Stir in the peas and cream; simmer to heat through.

Transfer the drained fettuccini and asparagus to the skillet with the mushroom mixture; toss to coat. Stir in the tomatoes and season with garlic salt and black pepper.

Remove from the heat and stir in the Parmesan cheese.

Zesty Lime Dip
Makes 4 cups

Beat 1 (8 oz.) pkg. cream cheese (softened) in a big mixing bowl on medium speed until very creamy. Beat in 1 (14 oz.) can sweetened condensed milk, 1 (6 oz.) container key lime yogurt, 1 (6 oz.) container piƱa colada yogurt, 1 tsp. vanilla, and 1 T. lemon juice until light and smooth; stir in the zest and juice of 1 lime. Cover and refrigerate overnight. Serve with your favorite fruit dippers.

Make-Ahead Tip: This recipe makes a lot of dip. Consider dividing into smaller portions and freezing some for later. Then just thaw and dip.

Peach-Berry Crumble, Serves 12-15

6 C. peeled, sliced fresh peaches (about 6 large)
4 C. sliced fresh strawberries
1 C. sugar
¼ C. flour
1 tsp. ground cinnamon
1 (15.25 oz.) pkg. golden butter cake mix
ā…” C. butter, melted

Preheat your oven to 350° and lightly grease a 9x13ʺ baking pan.

Dump the peaches and strawberries into the prepped pan. Sprinkle sugar and flour over the fruit. Stir until well combined, scraping down the sides; spread evenly. Sprinkle evenly with cinnamon and the dry cake mix; drizzle the butter over the top.

Bake for 55 minutes or until golden brown and bubbly.
Serve with whipped cream and sliced berries.
