Strolling along endless fields of wasabi with my translation team Miho & Julien, and Azuma san, head of outreach with the farm division
What a beautiful experience. Through connection and collaboration, I was granted private access with to learn how they manage, farm, and rotate thousands upon thousands of wasabi plants. How they use every single part of the plant (roots, meristem, petioles, leaves) for direct use in their restaurants, sales at their store, or processed products. And how they keep a culinary legacy alive despite climate change, aging farmers and new problems that arise every season (Florida fresh water shrimp, thieves).
Wasabi farming at this scale is unimaginable. It literally takes a village; of wives, laborers, chefs, accountants, security.
