🌱 TWO NEW GREENS IN MY KITCHEN! 🍃
I love finding something new at my local farm stand Dube's Farm and Market—and this week I came home with two greens I had NEVER cooked before!
💚Molokhia (Jute Leaf) Spinach
💚Sweet Potato Greens
And let me tell you… trying new vegetables is one of my favorite ways to keep healthy eating interesting!
Molokhia, also called jute leaf, is a leafy green traditionally used in Middle Eastern, North African, and Asian cuisines.
It provides:
🍃Vitamins A, C & E
🍃Vitamin K
🍃Folate
🍃Iron & calcium
🍃Fiber
🍃Plant compounds with antioxidant properties
Molokhia packs an exceptional nutritional punch, containing roughly 9 times more calcium and 4.6 times more beta-carotene than standard spinach.
One of the coolest things about molokhia? It naturally has a slightly silky texture when cooked, which makes it wonderful in soups, stews, and sauces.
Did you know you can eat the leaves of a sweet potato plant?
These tender greens are often overlooked, but they’re packed with nutrients including:
