One trade show done looking for ideas and another one Tuesday. Get over and like our page, share the page, and spread the word. Hoping to get the get the running lights fixed today and get the hoods installed tomorrow! Days are flying and I'm a matter of a few weeks we have 3 inspections set up. I'm definitely sweating timelines now. On top of our food we will have soft serve ice cream, cotton candy, and popcorn options for events. Meats processed by our parent business and veggies/maple syrup products by our sister businesses. Let's talk brisket. Today our parent company D & D Meats has a customer appreciation catering so I smoked a pile of brisket overnight in our sister business Jeezum Crow Smokehouse. What makes our brisket different than the others? First it's the moisture. Our brisket is moist and tender! Our smoker is the most advanced smoker on the market made by some of the best engineers in Germany. The smoker not only smokes but it roasts, braises, steam cooks, cleans itself and can even turn into a refrigerator after smoking to cool products faster. Oh it will shower products as well. Each product has its own recipes but our brisket recipe is pretty amazing. It's a 4 step process Just ask someone that's had it! We topped it with our brother companys maple bbq sauce from Tappin & Sappin SugarworksWe plan on having it on our cousin The Food Dudes food truck throughout the year we will have brisket meals, brisket sandwiches and even brisket pizza and brisket quesadillas! Well as long as our equipment in the trailer can handle my ideas.
We really don't know if the different businesses are sisters, sons, daughters, cousins, parents etc but you get the point. Our goal is to make, process, and grow as much as w can under our own business roofs... Veggies at Corvus House Gardens

We took what the sap gods and mother nature gave us but unfortunately looks like we will fall short of our average goal and will put us at one of the worst seasons we have had since 2014. As of now we are at 86 percent of average with hopes we will get one more load on the season but it's not looking great. We were prepared and fixed alot of main lines, saddles, high vacuum, and changed out our drops but it wasn't enough to fight mother nature for sure. Won't be long that the smoke from the sugarhouse will disappear so you better stop and get your visit in before you have to wait until 2024. Remember we have plenty of maple syrup, maple cream, and maple candies at our parent location D & D Meats.

Fresh maple candy coming at you! Will be available at D & D Meats tomorrow. Currently we have made 43% of our average crop. It's been a hard fought year this far with making smaller amounts daily as the temperatures linger around 33 to 37 degrees with no sun. The sugar content has been good thus far. Let's hope it breaks loose this upcoming week and we attempt to make our yearly crop. Remember you can purchase our maple syrup, maple candy, mustards, bbq sauces and array of different flavored maple creams as well as the traditional one at the store. We are hoping to have everything back online soon with our snack sticks and beef jerky.
