Our Niece is starting grad school this week. KU Med Center. RCJH.
Anyway, she asked for recipes. Here’s a family favorite. If you know a student in similar circumstances, feel free to pass it on.
“Your Dad said you’re looking for recipes. Here comes the secret of Grandma Beans
Get a bag of dry pinto beans. Start with a one pound bag. Any grocery store will have them
Soak them in water overnight. Drain and spread on a cookie sheet or clean towel. Pick through and sort out anything that isn’t a bean. Like small rocks and such
Place clean beans in a likewise clean saucepan. Cover with water about one inch deeper than the beans. Simmer until the beans start to split their skins. Add water as necessary. Burnt beans smell like ass.
Jeanne’s variant is to pick over the beans before soaking. She is smart.
Store the cooked beans in a jar in the fridge. Duh.
Make a roux, equal parts flour and oil. Any level of dark. Burnt roux also smells like, well, you know
Add to the roux milk, cream, evaporated milk, stock, or a mixture of them. Whisk until it’s a smooth sauce. Add cooked beans and stir. Season to taste
Variants include pork sausage, onions, peppers cooked with the roux. Shredded cheese takes it in a different direction.
Serve with crusty bread. Variants could include crackers, chips, fried onions or french fries. Onion rings from Sonic also acceptable.
Accompany with a sassy Beaujolais. White wines lose all character with Grandma Beans
If you serve this to guests and they don’t love it, suggest they go out for pizza or some sh*t”
