Do you know why end grain cuttting boards are the best option for a cutting board. Here’s why. A edge grain is like a paint brush turned perpendicular and a knife would cuts across those fibers. Destroys the fibers and dulls the knife. End grain is like turning paint brush up and the knife sliding through the end. The paint brush brushes part as blade comes through. The fibers aren’t damaged and the knife isn’t dulled. End grain as same and lasts for generations.
