Cứ độ 20 tháng chạp, các nhà trong bản lại rục rịch làm bánh khảo đón Tết Nguyên Đán. Với người Tày, Tết mà không có món bánh này thì chẳng là Tết nữa. Để lâu mà vẫn giữ được hương vị thơm ngon, không bị mốc, thiu nên bánh khảo tựa như một thứ lương khô ngọt ngào của người Tày. Họ làm bánh khảo truyền thống thay kẹo, để ăn Tết, mời khách tới thăm nhà.

Bánh được làm tư nguyên liệu gì?
Nguyên liệu làm bánh khảo chủ yếu là gạo nếp. Chọn loại gạo nếp ngon, thơm, hạt tròn mẩy rồi đãi sạch. Tiếp đó là rang gạo. Rang gạo phải cẩn thận vì nếu rang chưa đủ độ chín thì bánh sẽ không đủ độ thơm. Còn nếu rang gạo cháy vàng quá thì bột xay màu sẽ bị sẫm lại, bánh mất mùi thơm.Cách làm bánh ngon và đơn giản ngay tại nhà
Chuẩn bị bột: Để có được những phong bánh khảo thơm phức phải trải qua thật nhiều công đoạn. Nào là chọn gạo nếp, rang gạo. Sau khi đã xong rang, đổ gạo nếp đã chín vào cối đá xay mịn. Bột càng mịn bánh càng ngon.

Lựa chọn đường làm bánh: Ai đã từng thưởng thức qua bánh khảo truyền thống chắc chắn không thể quên vị ngọt ngào của loại bánh này. Đường dùng làm bánh thường là đường kính hoặc đường phèn. Nếu là đường phèn thì phải chọn những miếng đường vàng rộm, giã thật mịn. Đường có mịn khi trộn với bột mới tạo độ kết dính caoMuốn bánh thêm ngon, thêm bùi, người Tày thường trộn thêm nhân lạc, vừng hoặc thịt mỡ. Vừng đen hoặc lạc rang giã nhỏ, cầu kỳ hơn thì luộc chín mỡ lợn, thái hạt lựu rồi đem ướp với đường kính. Như vậy, bánh khảo vừa có được hương thơm của gạo nếp, bùi bùi của vừng lạc, vị ngọt của đường kính và béo ngậy của mỡ. Tất cả hòa quyện với nhau khiến bánh khảo có một hương vị đặc biệt không lẫn vào đâu được.

Người Tày thường chọn một góc khuất trong nhà, quét sạch và vảy một chút nước cho có độ ẩm, lót vài lớp giấy to bản hoặc giấy báo rồi trải đều bột. Lấy giấy phủ lên trên bột, cứ thế hạ thổ khoảng bốn, năm ngày cho bột hút đủ ẩm, ỉu ra là có thể đem đóng khuôn bánh.

Bánh sau khi đóng khuôn xong cắt thành từng phong nhỏ, gói lại thật khéo bằng một lớp giấy đủ màu xanh, đỏ, tím, vàng. Chiếc bánh khảo giờ đây đã được khoác lên mình một chiếc áo rực rỡ, vô cùng bắt mắt.
