🧀So what is Lactose-free cheese you ask?
🧀And what does it actually mean?
Lactose is the natural sugar found in milk. If you are lactose intolerant, your body doesn’t produce enough of the enzyme lactase needed to break those milk sugars down properly, and the result can be bloating, cramping, gas and digestive discomfort after eating dairy.
And here’s where some confusion/ misunderstanding may come in: being lactose intolerant does not necessarily mean giving up dairy – or cheese, thankfully!
Many (but not all) mature hard cheeses naturally contain very little lactose anyway because lactose is lost and broken down during the cheesemaking and maturation process.
But with our newly introduced lactose-free cheese, Vaccino Novello, we’ve taken the guesswork out of it for you. We’ve added the enzyme lactase during production, which breaks the lactose down into the simpler sugars glucose and galactose.
The result? 🧀 A delicious lactose-free, full-cream semi-hard cheese that tastes, smells, and melts just like any other semi-hard cheese. 🧀
Real dairy? Yip. 👍🏼 Real cheese? Hell yes! 👍🏼👍🏼
Just without the lactose, making it easier on sensitive tummies to digest.
