MASALA ROTI

1 cup brown flour
½ cup chana flour
2 Tbs oil
¼ tsp salt
2 Tbs fresh coriander leaves, chopped
2 Tbs methi (fenugreek) leaves, chopped
Ghee for smearing

METHOD

Sieve brown flour and chana flour together. Add salt, oil, chopped coriander and methi leaves. Mix well and then make a soft dough using hot water. Knead well. Divide into small balls. Roll each out to 20cm discs. Cook on tava, smearing a little ghee around, until light freckles appear on both sides. Remove and serve hot.

GRILLED PORTUGUESE CHICKEN

Ingredients

1 kg whole chicken
1 Tbs garlic
1 ½ tbs ginger
1 Tbs mixed red + green chillies, pouned
2 cups yoghurt
¼ tsp meat tenderizer
¼ cup sunflower oil
¼ cup olive oil
2 Tbs lemon juice
Salt to taste
Sauce: 1 ½ Tbs fresh red + green chilies,
1 Tbs garlic, coarsely ground
2 Tbs margarine
¼ cup olive oil
¼ cup sunflower oil
Juice of 1 lemon
Salt to taste

METHOD

Clean the chicken and sit through middle (like butterfly). Marinate in all the above ingredients for 2 hours. Grill on charcoal until well done. With kitchen scissors cut into 6 pieces. Keep in warm serving dish.
Sauce: Heat the margarine, and oils together. When hot, add the garlic and when aroma arises, add the crushed chillies. Stir and add lemon juice and salt. Keep the sauce ready. Once the chicken is done pour the sauce over and serve with French fries.
