Celebrate Organic September in style.
Here's a delicious, wholesome recipe for Organic Butternut and Spinach Quesadillas that's perfect for lunch, dinner, or a healthy snack.
Serves: 4
Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients

2 cups organic butternut squash, peeled and diced

1 tbsp organic olive oil

2 cups organic baby spinach, roughly chopped

1 small organic red onion, finely diced

1 tsp ground cumin

½ tsp smoked paprika

Salt and freshly ground black pepper, to taste

1 cup grated organic cheddar or mozzarella cheese

4 large organic whole-wheat tortillas

Optional: 1 fresh organic chilli, finely chopped

Optional garnish: fresh coriander

Method
1. Roast the Butternut

Preheat the oven to 200°C.

Toss the diced butternut with half the olive oil, cumin, paprika, salt, and pepper.

Cover a baking tray with Supa Mama® Embossed Kitchen Foil. Spread the butternut on the tray and roast for 20-25 minutes until tender and lightly caramelized.

2. Prepare the Filling

Heat the remaining olive oil in a pan over medium heat.

Sauté the onion for 3-4 minutes until softened.

Add the spinach and cook until wilted.

Stir in the roasted butternut and any optional chilli.

Remove from heat and allow to cool slightly.

3. Assemble & Bake the Quesadillas

Preheat the oven to 180°C.

Cover a baking tray with Supa Mama® Embossed Kitchen Foil.

Lay out the tortillas.

Spread the butternut-spinach mixture evenly over one half of each tortilla.

Sprinkle with grated cheese.

Fold the tortillas over to form a half-moon shape.

Bake for 15 minutes.

Serve hot with fresh guacamole, tomato salsa, a dollop of Greek yogurt or a simple organic green salad on the side.

Happy World Samoosa Day!
Here is a perfect recipe to help you celebrate:
Homemade Potato and Pea Samoosas
Ingredients
For the Dough
• 2 cups all-purpose flour
• 2 tbsp oil or ghee
• ½ tsp salt
• ½ cup water
For the Filling
• 2 medium potatoes, boiled and mashed
• ½ cup green peas
• 1 small onion, finely chopped
• 1 green chilli, finely chopped
• 1 tsp cumin seeds
• 1 tsp garam masala
Preparation Method
1. Prepare the Dough
• In a large mixing bowl, combine the flour and salt.
• Add the oil or ghee and rub it into the flour until the mixture resembles breadcrumbs.
• Gradually add the water and knead until a firm, smooth dough forms.
• Cover the dough and allow it to rest for 20 to 30 minutes.
2. Prepare the Filling
• Heat a small amount of oil in a pan.
• Add the cumin seeds and allow them to sizzle for a few seconds.
• Add the chopped onion and green chilli, then sauté until the onion becomes soft and translucent.
• Stir in the green peas and cook for 2 to 3 minutes.
• Add the mashed potatoes and garam masala.
• Mix well and season to taste with salt if desired.
• Remove from the heat and allow the filling to cool completely.
3. Shape the Samoosas
• Divide the dough into equal-sized balls.
• Roll each ball into a thin oval or circle.
• Cut each circle in half.
• Form each half into a cone shape and seal the edge with a little water.
• Fill the cone with the potato mixture.
• Seal the open edge firmly to create a triangle-shaped samoosa.
Cooking Method
• Preheat the oven to 180°C.
• Line a baking tray with Supa Mama Baking Paper to prevent sticking and make cleaning up easier.
• Arrange the samoosas on the lined tray, leaving a small gap between each one.
• Lightly brush the samoosas with oil for a golden, crisp finish.
• Bake for 20 to 25 minutes, or until golden brown and crisp, turning once halfway
