When to salt your meat? Easy — before the braai, not when the meat is already fighting for its life on the grid.

For steak: salt it at least 40 minutes before, or just before it hits the heat. Anything in between and you’re just creating drama with seasoning.

For chicken: give it time. Salt, spice, marinade — let it sit a bit so it tastes like you had a plan.

For chops: salt before the braai, but don’t bury them like you’re preserving them for winter.

For wors: relax. The wors already knows who it is. Don’t overthink it.

Braai rule: salt brings out flavour, but too much salt brings out family comments. Use wisely 🔥🥩

How to braai for 10+ people without stress:

1. Light the fire early. “We’ll braai now-now” is how people end up eating at 10pm.
2. Do the chicken first, unless you enjoy explaining food poisoning at a family WhatsApp group level.
3. Keep wors and chops moving. This is not the time to stare dramatically into the flames.
4. Have extra tongs. One pair always disappears with the uncle who “just wants to check something.”
5. Feed the kids first. Peace at the braai starts with full children and silent cousins.

Big braai rule: plan properly, fire confidently, and never let the guy with too many opinions stand too close to the grid 🔥

Every braai has one.

The fire is glowing, the wors is turning, the chops are doing important things — and then suddenly, there he is. Parked in front of the grid like he’s guarding national infrastructure.

Nobody can see if the meat is ready. Nobody can check if the chicken is behaving. You just hear updates from behind the human curtain:

“Almost there.”
“Needs another two minutes.”
“No, don’t touch it.”
“I’ve got it.”

Meanwhile, the rest of the family is doing neck exercises from the patio, trying to peek around him like it’s a Springbok penalty kick.

But somehow, we allow it.

Move slightly, my guy. The people need answers.
