Every braai has one.

The fire is glowing, the wors is turning, the chops are doing important things — and then suddenly, there he is. Parked in front of the grid like he’s guarding national infrastructure.

Nobody can see if the meat is ready. Nobody can check if the chicken is behaving. You just hear updates from behind the human curtain:

“Almost there.”
“Needs another two minutes.”
“No, don’t touch it.”
“I’ve got it.”

Meanwhile, the rest of the family is doing neck exercises from the patio, trying to peek around him like it’s a Springbok penalty kick.

The braai master has only just picked up the tongs.

And already, from somewhere near the snack table:
“So… is the meat almost ready?”

Five minutes later, same question.
Different angle. Same hunger.

By the third time, the braai master is no longer answering with words. Just a slow turn of the head and that look that says, “My friend, this is not a microwave.”

But we forgive them.

Because at every South African braai, there must be one person keeping the pressure on the protein department 🔥

Then suddenly everyone is “just having one.”

Next thing, the bag is being passed around like official braai paperwork, the kids are circling, one cousin is digging for the folded chips, and someone is saying, “Don’t finish it, the meat is still coming.”

Five minutes later, he’s rearranging the coals, judging everyone’s tongs, and explaining that the fire “just needs air” like he studied flame behaviour at varsity.

No one asked him to take charge.
But somehow he’s now the Head of Heat Distribution, Minister of Smoke Control, and Acting Director of When The Meat Goes On.

There are mistakes.
And then there are braaibroodjie mistakes 🍞

Because a braaibroodjie is not just bread with things inside.
It is architecture.
It is timing.
It is a small toasted contract between cheese, tomato, onion and fire.

So when someone starts building too early and puts the cheese down while the onion is still sitting there raw and confident, people notice 🧀

The braai master sees it first.
The auntie near the salad table sees it second.
Then somebody says, “Are we just doing anything now?”

Because everyone knows the onion needs its moment.
It must soften.
It must calm down.

Only then may the cheese enter the conversation.

Put the cheese on too early and now you’ve got melted cheese holding hands with onion that still has attitude.
That’s not a braaibroodjie.
That’s a disciplinary hearing between two slices of bread.

At a South African braai, the order matters.
Respect the onion.
Protect the cheese.
Keep the peace.

Everything is going beautifully.

The fire is doing what it must.
The meat is coming off in waves.
The salads are lined up like they’re waiting for inspection.
Somebody’s child has already taken one roll and two pieces of garlic bread before the adults have even started.

Then someone opens the packet of paper plates and realises there are only three left.

Silence.

Not peaceful silence.
The dangerous kind.

Because now suddenly everyone becomes a logistics expert.

“Who bought the plates?”
“Why didn’t we get two packs?”
“Why are the kids eating on full-size plates?”
“Can’t people just use the same plate again?”
“Who took a plate just for chips?”

And somewhere near the cooler box, one uncle is calmly eating off a serviette like he’s been training for this moment his whole life.

At a South African braai, running out of paper plates is not a small problem.
It’s the moment the whole operation turns into crisis management with potato salad.

Always count the plates before the fire starts.
Because once the wors is ready, nobody wants to hear about “making a plan.”

Then someone says, “Pass me the Bluetooth.”

That’s when the peace ends.

Because suddenly everyone has an opinion.
One person wants amapiano.
One person wants old-school Afrikaans.
One person wants gospel because “it’s Sunday, guys.”
Someone’s uncle wants the same song from 1987 played three times because “this is real music.”
And there’s always that one cousin who thinks a braai is the right time to test his deep-house playlist that has no words, no chorus, and no clear ending.

Meanwhile, the braai master is standing by the fire, tongs in hand, trying to keep the wors from burning while also judging every song choice like he’s on the Idols panel.

At a South African braai, the speaker is never just a speaker.
It’s a small box of drama.

Choose the playlist carefully.
Friendships have survived burnt chops.
They have not always survived the wrong music.
