Having fish for the first time?
Don't worry - here is all the basics you need to know!
1. Always ensure your fish is dry. Most fish come packaged with a water glaze to prevent dehydration and oxidation of the fish during storage, when the fish defrosts, making sure it is dry is essential for cooking.
2. Don't move your fish too soon. Leave a few minutes before turning over the fish allowing it to form a beautiful crisp outer layer.
3. Buying skin-on fish? When cooking - start panfrying the fish SKIN-SIDE DOWN. This enables the skin to become nice and crisp instead of soggy and fallen off.
4. Lemon after cooking - lemon and fish are like peas in a pod. It brings out the flavour of your fish without overpowering the taste.
5. Always season your seafood before cooking. Marinating meat & seasoning fish are 2 different concepts. Fish needs to be seasoned just a few minutes before cooking.
6. When you are cooking prawns, remember that they are only finished when they curl into a loose "C" not a whole complete circle.
7. Let your fish rest for a few minutes when you have finished cooking. This helps the flavour sink into the fish even more.
8. Do not drown you fish in sauce. This takes away from the natural taste and prevents the nutritional benefits to take place.
