THE STORY OF SOETE SONDER END AND HOW IT ALL STARTED



We've been making fudge since 2011. With my grandmother's recipe, buckets full of tears and many late nights we finally had a great product. I was six months pregnant, very discour

aged and felt that we were not financially prepared for little Maya's arrival. I can still remeber that one morning in my quiet time when I asked God for help and guidance. That same week my housekeeper's husband accidentally stepped on their 4 month old puppy causing a broken hip. Christene rushed to me and on the Friday morning we took the puppy “Ounooi” to the SPCA. After a long wait the vet told us that we had two options, an opertation costing R800 or put Ounooi to sleep. Christine was in tears...

That night I could not sleep. How will we manage to get the money in two days? The next morning I woke up and phoned Christine to tell her she'd better hurry, we are going to make fudge and sell it in town. The Golf Club had a golf day and everybody told us we should try and sell our fudge there. Andre, the captain of the club, was so kind. He told the whole sad story during the prize giving and had the brilliant idea to auction the fudge starting at R100! Some people were even willing to pay a R150! By the end of the day, we made R800! What a wonderfully closed knit and caring community we have, I thought to myself. Everybody is always willing to help. They absolutely loved the fudge and it gave me the confidence to make this our new product line. God gave me the guts to go out there and sell my product. The next week I got into my car starting at the Oumeul Bakery in town and went all the way down the N2...
I have to say, I think my big belly helped a lot because not many people would say "no" to a pregnant lady....

Two years later we had a team of six local ladies. We were making our own condensed milk and producing over two tonnes of fudge a month. We supplied close to 250 shops. The feed back we get from our customers is very positive and they are always asking us what we are going to make next.

For years, we have been making our own condensed milk. The milk is from the farm where we have our small factory. Here is a recipe to do it yourself at home.

This is from trial and error. Let me know if you make condensed milk another way. We use less sugar for our condensed milk that we use to make the fudge with. We add the sugar at the start to caramelise it more. www.mariswithlove.co.za

Slow-Simmered Condensed Milk

Ingredients
• 2 Litres Fresh Whole Milk
• 900 grams White Sugar

Instructions
Initial Reduction (The Slow Simmer)
1. Pour the 2L of milk into a wide, heavy-bottomed pot or Dutch oven to give it maximum surface area for fast evaporation.
2. Place over low heat and bring the milk to a very low, gentle simmer.
3. Let it cook down slowly, stirring occasionally to prevent skin from forming or milk solids from sticking to the bottom.

Monitor & Lower the Heat
1. As the water evaporates and the milk thickens, watch the pot closely. Lower the heat further as needed to keep it at a gentle simmer without scorching.
2. Continue cooking until the liquid has reduced by approximately a third (2 to 6 hours, depending on burner strength).

Stir in the Sugar
1. Add the 900g of sugar to the hot, reduced milk.
2. Stir continuously over low heat for 3 to 5 minutes until every sugar crystal is completely dissolved and the mixture turns smooth, glossy, and noticeably thicker. The longer you cook it, the thicker it will get. Keep a close eye on it as it can catch easily.

Cool & Store
1. Remove from the heat and allow the condensed milk to cool to room temperature. It will thicken into a lovely, rich pourable syrup as it cools.
2. Pour into clean, airtight glass jars or containers and seal tightly.
3. Storage: Store in the refrigerator—it will keep fresh for months.

Sugar Timing Reminder: Adding the 900g near the end as written keeps it a lighter, fresh-dairy colour. If you want a darker, golden-caramel colour and deeper flavour, add the 900g of sugar right at the start with the cold milk and let it simmer together the entire time.
