π₯ Ancient Grain Garden Salad
A simple, hearty salad that swaps pasta, quinoa, or croutons for nutritious whole ancient grains.
Ingredients
2 cups cooked and cooled ancient grains (spelt, emmer, khorasan, or a mix)
2 cups mixed salad greens
1 cup cherry tomatoes, halved
1 cucumber, diced
ΒΌ red onion, thinly sliced
Β½ cup crumbled feta cheese (optional)
ΒΌ cup sunflower seeds or toasted pumpkin seeds
Dressing
3 tbsp olive oil
1 tbsp lemon juice or apple cider vinegar
1 tsp Dijon mustard
Β½ tsp honey
Salt and pepper to taste
Directions
In a large bowl, combine the cooked grains, greens, tomatoes, cucumber, and red onion.
Whisk together the dressing ingredients.
Pour the dressing over the salad and toss gently.
Top with feta and seeds before serving.
Tip: Cooked ancient grains have a pleasantly chewy texture and nutty flavor that make them a satisfying replacement for pasta salads. They also hold up well in the fridge, making this a great make-ahead lunch.
Variations
Mediterranean: Add olives, roasted red peppers, and parsley.
Harvest: Add diced apple, dried cranberries, and toasted walnuts.
