🌾 Mother Nature keeps our farmers on their toes.

Some of our fall-seeded crops were hit hard by this week's heavy winds and rain. At this stage, the crops are tall and growing quickly, but their root systems aren't yet fully established, making them especially vulnerable to severe weather.

The result? Large sections of beautiful grain fields have been pushed over and are now lying flat. While disappointing to see, it's just one of the many challenges farmers face each season as they work to grow healthy, organic food.

Farming is a constant lesson in patience, resilience, and adapting to whatever nature delivers. Here's hoping for calmer skies and favourable growing conditions in the weeks ahead. 🌱

🥞🌾 Start Your Morning with Organic Buckwheat Pancakes! 🌾🥞

Buckwheat may not be a wheat at all, but it makes a delicious, hearty pancake with a rich, nutty flavour. Perfect for a wholesome breakfast and a great way to enjoy this versatile grain.

Organic Buckwheat Pancakes

Ingredients:
• 1 cup buckwheat flour
• 1 tbsp sugar or honey
• 1 tsp baking powder
• ¼ tsp salt
• 1 egg
• 1 cup milk (or your favourite dairy-free alternative)
• 1 tbsp melted butter or oil
• 1 tsp vanilla (optional)

Directions:

In a bowl, combine buckwheat flour, sugar, baking powder, and salt.
In a separate bowl, whisk together egg, milk, butter, and vanilla.
Add wet ingredients to dry ingredients and stir until just combined.
Pour batter onto a lightly greased skillet over medium heat.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve warm with maple syrup, fresh berries, or your favourite toppings.

Despite its name, buckwheat isn’t actually wheat at all!
It’s a seed related to rhubarb and sorrel — making it naturally wheat-free and a popular choice for those avoiding gluten.

Here are a few more fascinating buckwheat facts:

✨ Buckwheat grows incredibly fast and can be ready to harvest in as little as 10–12 weeks.
🐝 Buckwheat flowers are loved by bees and produce a rich, dark honey prized by beekeepers.
🌱 It has been grown for thousands of years across Asia and Eastern Europe.

🌾 Ever wonder what a “Bushel” actually is?

The word has been used in agriculture for hundreds of years and originally referred to a measure of volume . . . basically the size of a container used to hold grain. Long before modern scales and metric systems, farmers measured crops by how many bushels they could harvest and store.

Over time, the grain industry standardized bushels into weight measurements, but here’s where it gets interesting:
🌾 A bushel of wheat = 60 lbs
🌾 A bushel of barley = 48 lbs
🌾 A bushel of oats = 34 lbs

So even though we still use the word “bushel,” it doesn’t weigh the same for every crop.

Today, bushels are still widely used across North American agriculture, especially when talking about crop yields and grain markets. Farmers may say a field yielded “80 bushels per acre,” while grain may later be sold, transported, or processed in pounds or metric tonnes.

It’s one of those old agricultural terms that has stood the test of time — connecting modern farming to generations of history. 🚜🌾

🌾Throwback to summer 2019 . . . when these grain bins were installed here at Fieldstone Organics. What looks like a quick timelapse was actually weeks of planning, hard work, heavy equipment, and teamwork . . . all with one goal in mind: creating more storage capacity for the incredible local organic crops grown by our farming partners.

Every harvest season brings only a small window to bring in the grain at peak quality. Having the right storage infrastructure helps us protect that quality, maintain food-grade standards, and support the growing demand for locally grown organic foods.

🌾 Soft & Nutritious Whole Grain Dinner Rolls 🌾

These wholesome dinner rolls are made with freshly milled Spelt or Khorasan flour and are perfect alongside soups, salads, or your favourite family meals. Soft, hearty, and full of flavour — homemade goodness at its best!

Ingredients:
🥚 1 large egg, room temperature
💧 1 1/3 cups warm water (80°F/27°C)
🫒 ¼ cup oil (grapeseed oil works beautifully)
🌱 Flax Mixture:
• 2 Tbsp freshly ground flax
• 2 Tbsp water
(Mix together and let sit 2 minutes until gelatinous)

🍬 ¼ cup sugar
🧂 2 tsp sea salt
🌾 4 cups Spelt or Khorasan flour
🍞 2 ¼ tsp active dry yeast

Directions — Bread Machine Method:
Add ingredients to your bread machine in the order listed above. Select the dough cycle and allow it to complete.

Once finished, divide and shape dough into buns or place into a greased bread pan. Cover and let rise in a warm place:
• 30 minutes for buns
• 45 minutes for bread, or until doubled in size

Bake at 350°F (177°C) for 15–25 minutes until golden brown.

✨ No Bread Machine? No Problem!
1️⃣ In a large bowl, combine warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
2️⃣ Mix in egg, oil, flax mixture, and salt.
3️⃣ Gradually stir in flour until a soft dough forms.
4️⃣ Knead by hand for 8–10 minutes until smooth and elastic.
5️⃣ Cover and let rise in a warm place for 1–1½ hours, or until doubled.
6️⃣ Shape into buns or bread, place on greased pans, and allow a second rise as noted above.
7️⃣ Bake and enjoy the incredible aroma of fresh homemade whole grain baking 🌾

🌾✨ Whole Grain Sourdough Pitas . . . Homemade & Heavenly! ✨🌾
If you’ve never made fresh pita at home, this is your sign! Soft, warm, wholesome, and made with freshly milled whole grains & your active sourdough starter . . . these little pockets of goodness are next-level delicious. 😍🔥

Whether you fill them, dip them, or enjoy them warm out of the oven, these pitas are sure to become a staple in your kitchen.

🥙Sourdough Pita Bread 🥙

Yield: makes 8 flatbread

• 500 g Hard Red Winter Wheat (freshly ground into whole grain flour)
• 360 g water ( 1 ½ c + 2 tbsp) - lukewarm
• 12g ( 1 tbsp) olive oil
• 10g ( 1 ½ tsp) salt
• 70g (1/4) c sourdough starter (active and fed 12 – 24 hours prior)

Method
• Add the olive oil to the water. Add the room temperature starter to the water mixture
• Add the salt to the flour and blend. Add dry mix to the wet mix and blend until well incorporated
• Let rest for about 10 minutes
• At this point you can either knead for 5 – 10 minutes or do about 6 stretch and folds
• Cover with plastic and let proof for 8 – 12 hours. If you start this process late in the day and want to bake the pita’s the next day you may want to place the mixture in the refrigerator to slow down the rising. Remove just before bedtime and let rise overnight if you plan to bake in the morning
• Divide the dough into 8 equal size portions and form them into balls. Roll the ball into round disks about 3/16 – ¼ inch thick
• While rolling out dough preheat your pizza stone at 500 degrees Fahrenheit for a minimum of 30 minutes.
• Your pita’s can be rolled out and placed on a flat, floured cookie sheet and covered with a tea towel while the pizza stone preheats. Ie. 15 – 20 minutes
• Bake at 450 degrees for about 6 minutes (depending on your oven) and enjoy!
Notes
Whole grain measure – generally if you measure the grain the flour yield is slightly more. This recipe requires 500g of whole grain flour
