It is up to the animal owner to arrange an appointment with a meat cutter of their choice BEFORE booking an appointment with me to slaughter livestock on their farm/ranch. Attention: I've been asked a few times if meat from farm slaughtered animals can be sold. The short answer is NO. Meat from Farm slaughtered animals is by law only to be consumed by the animal owner, their family and friends. Me

Did you know that here in Canada we produce top quality beef, but only about 30% remains in the country, the rest is exported. At The Local Butcher Merritt we sell Canadian and Locally raised beef and our pork is raised and processed in BC.

On this hot day I am sitting in my cool work shop in the basement of our house and sharpen a few saw blades doe my Jarvis Beef splitting saw 444. I used to give the blades to a sharpening service at the cost of $40 each blade. I learned how to do it myself, the blades are sharper and no cost to me.

Eviscerating (removing the internal organs) from a beef is a task that needs skill and great care. Any puncture of the stomach, intestines, urine bladder and gallbladder would cause spoilage of the meat inside cavity.
Interesting fact: The internal organs of a beef can weigh up to 44% of the animals total live weight.

Small 1 year old Belted Galloway steer this morning, he broke out one too many times and will now be tasty food for a hard working farmer family.
With 330 lb hanging weight this one of the smallest beef I ever slaughtered. It was to small to fit on my beef gambrel and i had to come up with another way the lift it up. Butcher apprentice Mayka accompanied me on this trip, thanks for coming along.

Beautiful 2 year old Hereford steer this past Sunday. Myka, a Student at the TRU butcher school, is with me on this and a few upcoming farm kills to learn the slaughter part of our trade. For us old timers it a special treat and honor to pass our knowledge on to a new generation of butchers, specially if they are as talented, eager and enthusiastic to learn as Myka is.
