DOG OF THE MONTH PUP-DATE

We’ve had THREE more entries come in over the weekend, and we love seeing them.

But we want even more.

This month, we’re looking for the wild, the wacky, and the wonderfully ridiculous dogs out there. Got a photo of your dog pulling their funniest face, sitting in a bizarre position or just being completely daft? We want to see it.

We’re looking for the WEIRD AND WONDERFUL, the WACKY AND WISE, the ZOOMIES AND THE ZONKED!

Is your dog a complete character? Maybe they sleep in the strangest positions, have a face that says it all, suddenly tear around the house at 100mph, or simply have their own wonderfully weird way of doing things.

FOOD FRIDAY: VENISON & MUSHROOM FILO PARCELS

Something a little different for this week's Food Friday.

Crisp golden filo pastry filled with tender Cowal Deer venison, mushrooms, onion and a creamy mustard sauce. These Venison & Mushroom Filo Parcels look impressive on the plate but are surprisingly straightforward to make.

Perfect with potatoes and seasonal vegetables for a weekend dinner.

INGREDIENTS

* 500g Cowal Deer diced venison, cut into small pieces
* 200g mushrooms, finely sliced
* 1 small onion, finely chopped
* 1 garlic clove, crushed
* 1 tbsp wholegrain mustard
* 100ml double cream
* 1 tsp dried thyme
* 6 sheets filo pastry
* 30g butter, melted
* 1 tbsp oil
* Salt and black pepper

METHOD

1. Preheat the oven to 200°C/180°C fan.

2. Heat the oil in a large frying pan over a high heat.

3. Add the venison and quickly brown it in batches. Remove from the pan and set aside.

4. Reduce the heat and add the onion and mushrooms. Cook until softened and any excess liquid from the mushrooms has evaporated.

5. Add the garlic and thyme and cook for another minute.

6. Return the venison to the pan and stir through the wholegrain mustard and cream.

7. Cook briefly until the sauce has thickened, then remove from the heat and allow the mixture to cool slightly.

8. Lay out the filo sheets and brush lightly with melted butter. Layer the sheets together before cutting into sections.

9. Spoon the venison filling into the centre of each section and fold the pastry around the filling to create individual parcels.

10. Brush the tops with a little more melted butter and bake for approximately 15–20 minutes, until crisp and golden.

11. Serve hot with potatoes, seasonal vegetables or a fresh salad.

FOOD FRIDAY: VENISON KOFTA FLATBREADS WITH MINT YOGHURT

Looking for something a little different for dinner this weekend?

These Venison Kofta Flatbreads are packed with flavour, simple to make and a great way to use Cowal Deer minced venison. The rich flavour of the venison works brilliantly with warm spices, fresh salad and a cool mint yoghurt.

A great Friday-night meal where everyone can build their own.

INGREDIENTS

For the koftas:

* 500g Cowal Deer minced venison
* 1 small onion, finely grated
* 2 garlic cloves, crushed
* 1 tsp ground cumin
* 1 tsp ground coriander
* 1/2 tsp smoked paprika
* 1 tbsp chopped fresh parsley
* Salt and black pepper
* 1 tbsp oil

For serving:

* 4 large flatbreads
* Shredded lettuce
* Sliced tomato
* Thinly sliced red onion

For the mint yoghurt:

* 150g natural yoghurt
* Small handful of fresh mint, finely chopped
* Squeeze of lemon juice
* Pinch of salt

METHOD

1. Place the minced venison, onion, garlic, cumin, coriander, paprika and parsley into a bowl. Season well and mix together.

2. Divide the mixture into 8 portions and shape each one into a short kofta.

3. Heat the oil in a large frying pan over a medium-high heat.

4. Cook the koftas for around 8–10 minutes, turning regularly, until browned and cooked through.

5. Mix the yoghurt, mint, lemon juice and salt together in a small bowl.

6. Warm the flatbreads and fill with lettuce, tomato and red onion.

7. Add the hot venison koftas, spoon over the mint yoghurt and serve straight away.
