Your BBQ is only half the story. . . or so the debate goes in our offices. As HUGE fans of all things BBQ, we are unsure!

But, unpopular opinion aside. Apparently can suite tasteful garden styles also and are not just about huge lumps of meat 😆

We don't think I'll ever get bored of cooking like this.

A thick-cut tomahawk steak, a couple of courgettes, lumpwood charcoal and sunshine. That's it.

One of the things we love most about cooking on a Kamado Joe is how much control you have. You get that incredible crust on the outside, while keeping the middle perfectly pink and juicy every single time.

The hardest part? Waiting for it to rest before slicing.

Ever wondered why some wood burning stoves stay beautifully lit for hours, while others seem to need constant attention?

The secret is airflow.

When lighting your stove or adding fresh logs, keep the vents open to help the fire establish. Once the logs are burning strongly with bright, lively flames, gradually reduce the airflow until you find the sweet spot.

Close the vents too early and you can suffocate the fire. Leave them fully open for too long and you'll burn through fuel faster than necessary.

A healthy fire should have bright, dancing flames, little to no visible smoke from the chimney, and glass that stays mostly clear.

✔️ Use properly seasoned wood
✔️ Let the fire establish before adjusting the vents
✔️ Reduce airflow gradually, not all at once

Get the airflow right, and you'll enjoy a longer-lasting, more efficient burn and a much cosier stove experience.

Hot days, freezing nights... why does the UK always do this to us?

​We are finally getting a proper heatwave just before June hits. But you know exactly how it goes - one minute you’re sunbathing, and the next minute the sun drops and you are sprinting inside for a hoodie.

The Ultimate Kamado Joe Junior Pulled Pork

​Prep time: 15 mins
Cook method: Low & Slow / Indirect Smoke

​Ingredients
​Pork shoulder / Boston butt
​Yellow mustard (as a binder)
​BBQ rub of choice

​Method
​Prep the Meat: Pat the pork shoulder dry. Apply a generous coat of yellow mustard over the entire surface to act as your binder.
​Season: Heavily dust with your favorite BBQ rub until the meat is completely and evenly coated on all sides.
​Fire Up the Grill: Set up your Kamado Joe Junior for indirect cooking with the deflector plate. Load it with quality lump charcoal and your choice of smoking wood chunks or chips. Target a steady temperature of around 110°C to 120°C (225°F to 250°F).

​The Cook: Place the seasoned pork shoulder onto the cooking grate. Close the lid and let it smoke undisturbed until a rich, dark bark forms and the internal temperature reaches your target (around 93°C / 200°F for clean pulling).
​Rest & Shred: Remove the meat from the grill and let it rest for at least 30 minutes. Use meat claws to shred the pork into juicy, tender pieces, mixing the crunchy bark throughout.

​Serve packed into brioche buns with coleslaw and an extra drizzle of BBQ sauce.

Forget the takeout. If you aren't slow-fermenting your dough, you're missing out on that airy, charred perfection.

​Here is how we do it in the Kamado Joe.

​The Secret Sauce (and Dough)
​For the Dough:
​500g "00" Grade Flour
​500g Strong White Bread Flour
​600ml Lukewarm Water
​7g Fast-Action Dried Yeast
​20g Fine Sea Salt
​Cornmeal (for the slide)

​The Toppings:
​San Marzano style Plum Tomatoes (crushed)
​Dried Oregano, Tomato Purée, EVOO, Salt & Chili Flakes
​Fresh Mozzarella
​Pepperoni & Shredded Beef (optional but recommended)

​The Method
​The Long Game: Mix your dough and let it cold ferment in the fridge for 48 hours. This is where the flavor lives.
​No Rolling Pins: Hand-stretch only. We need to keep those air bubbles in the crust for that iconic Neapolitan puff.
​High Heat: Fire up the grill with a pizza stone until it's screaming hot.
​The Bake: Cook until the crust is charred and the cheese is bubbling.
