Every time I think of artichoke, I think of lemon taste probably because this is how my mother is making them.
When I saw Foglie Di Ca****fo pasta by I decided to take the extra step.

What do we need?

For the pasta
1 Foglie Di Ca****fo pasta from

For the sauce.
4 tablespoons of 1 garlic clove whole.
1 medium onion diced.
2 carrots diced.
2 teaspoons of pine nuts
Lemon juice for 2 lemons
Parsley or mint for the garnish

let's do it.
For the pasta
Boil the pasta according to the manufacturer's instructions that are on the packet.
For the sauce
In a big pan add the olive oil and when it is hot add the garlic.
Remove the garlic when it is brown.
Add the onion and the carrot.
Stir for 3 to 5 minutes.
Add the pine nuts a minute before adding the pasta.
When the pasta is al dente according to your taste and preference, add the pasta to the pan, and pure the lemon juice while you stir the pasta.

Add the mint or basil and enjoy.
