We had a simple summer dinner of roast chicken, sweet potatoes and a delicious tomato and onion salad. The tomatoes and basil were from our garden. I got the recipe for the salad from Sara Sara Tercero/Betterfoodguru . Everything I've made from Sara has been delicious. If you don't already follow her, check out her page.

Making your own Pumpkin Spice mixture couldn't be simpler. This recipe makes 1/4 cup. So you can divide it in half or double it if you want to. It keeps for a year.

Homemade Pumpkin Spice

3 tablespoons ground cinnamon
1 tablespoon ground nutmeg
1 tablespoon ground ginger
2 teaspoons ground allspice

In a small bowl, combine all ingredients. Store in an airtight container for up to a year.

I've been in the kitchen today, making sun-dried tomatoes. I used my oven to dry the tomatoes (3 hours at 250°F) and added them to a jar with some basil and oregano from our garden then topped them with olive oil. Super simple and oh so delicious! I'll keep adding to the jar when I have an overabundance of ripe tomatoes.
