Back in the day, when I was a young wife and mother, I loved the ease of a quick drop cookie. We didn't refrigerate our dough before baking. Recipes never said to use salted or unsalted butter. I don't think I ever bought unsalted butter when my kids lived at home. 😊 This is one of those simple recipes that you simply mixed and baked and were eating within half an hour. I hope you enjoy them!
Oatmeal Chip Cookies
1 cup butter, room temperature
2 cups brown sugar, firmly packed
2 large eggs
1 tsp vanilla
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
2 cups rolled oats (any variety)
2 cups semisweet chocolate chips
3/4 cup medium coconut
Preheat oven to 350°F.
Cream butter and sugar together. Beat in eggs, one at a time. Add vanilla.
Add remaining ingredients. Mix well. Drop by spoonfuls onto parchment lined baking sheet. Bake for 8-10 minutes or until golden and the edges start to brown. Makes about 5 dozen cookies. Store in an airtight container at room temperature or they also freeze well.
