Dedicated to preserving the pure, clean flavor of chocolate, Fran Bigelow is renowned for creating intense chocolate notes with a seductive texture. Her mastery of chocolate allows her to bring out its depth and complexity by building layers of flavor that heighten the experience. In 1982, Fran introduced the artisan chocolate experience to consumers when she opened her European-style chocolate shop in Seattle, Washington. Created as a place to showcase her sublimely rich desserts, Fran also offered caramels and truffles, which quickly captured the favor of her customers and became her signature confections. Fran maintains the flavor and quality of her chocolates through small batch production and by selecting the finest, and when possible, local and organic ingredients. For her couverture she selects the highest quality cacao available from regions such as Venezuela, Madagascar, and Ecuador. Retail Locations

Fran is honored and grateful to receive the Specialty Food Association’s Lifetime Achievement Award.
She opened her first shop in 1982, fueled by a belief that American chocolate could achieve the same level of handcrafted artistry as the confections she admired in Europe. Her tireless pursuit of quality during those early years helped shape the industry we know today, and we are so grateful to share it all with you. Cheers to Fran and this well-deserved honor!
